I just wanted to send an email to say how much we enjoyed our overnight stay at the Mercure on Saturday evening (30/1/10). We ate at the restaurant both evening and morning and we found the waiting staff to be excellent. They were so friendly, patient and helpful. We also had a tiny bit of trouble with our airconditioning unit and the maintenance man was very happy and helpful. By the way the food was excellent too. Service given by friendly, helpful people makes such a difference so, thank-you for a very pleasant stay and for hiring such excellent customer service people. Kind regards, Dawn and Peter Winfield

I stayed at the Mercure Caroline springs on a windy cold sunday night in melbourne. From stepping foot inside the reception area I was greeted by lovely Victoria who made me feel at home, she answered all the questions I asked and even the ones I didn't. She was helpful and happy which makes such a difference from some other hotels I have stayed in. The rooms are beautiful, the beds extra comfy and luxurious, the towels massive, and the spa bath... oh my god , just the thing to warm and relax. I ordered the pesto garlic and herb pot bread, the rocket parmesan , balsamic cherry tomato salad, the porterhouse steak with garlic prawns & fat chips and beef jus, and the apple tarte tatin. The steak was cooked to perfection , the handmade fat chips were crunchy and creamy , the jus exceptional, the salad was beautiful and the bread warm and toasty. my apple tarte tatin was wonderful too... the whole meal was exceptional . I would go back just to eat there. I had a beautiful stay at the mercure caroline springs and will definetly go back again to enjoy it some more. thankyou to all the staff.
